baby owl

I had just finished a pretty big crochet project when I found this cute owl pattern on Pinterest.  I have lots of extra yarn and stuffing so I thought it'd be a fun little present for the daughter of one of the other psychology interns. And in case anyone out there likes my meatless Monday updates, I made two really yummy vegetarian meals over the weekend.  First, these roasted veggie and black bean burritos  are super good, super easy, and super healthy (I did not use jalapenos).  Nate and I highly recommend the recipe.  Second, I made a zucchini, onion, and potato quiche because quiche is a great way to use up eggs (the chickens are averaging about 4 eggs per day now).  I tried taking some step-by-step pictures, but this is the only one that turned out.

Isaac, you should have spent Valentine's Day at my house!! I bought one bag for Nate.  He bought me the other three.

Snack Time

Kale Chips I make mine with enough olive oil to coat and a dash of salt. Bake at 350 for about 10ish minutes or until the edges are brown and they are nice and crisp. Watch'em toward the end because they can burn quick. This small batch lasted us about 30 seconds - they are that good!

Meatless Monday

Spinach and Tomato Lasagna (recipe from my Cook's Country magazine) with Skillet Roasted Balsamic Brussels Sprouts. Technically this was last night's dinner and since the recipe makes a 9x12 casserole dish full of lasagna, it will be dinner tonight and tomorrow and the next day and...well, good thing it's delicious. (Again sorry for the less than stellar picture - I was just in such a hurry to start eating!)

More baby goats!

Cindy had her babies this morning - 4 of them!  The most ever born on the farm.  Prepare yourself for cuteness.

Baby Goats!

Tiny had her babies yesterday.  I got to help dry them off and warm them up.  One baby is obviously stronger than the other, so I hope they both make it. Baby goats are so incredibly adorable.  Hopefully in the spring I will be able to get some better pictures when all the other goats have their babies. We don't know what Cindy is waiting for - probably warmer weather.  We woke to up to 3 inches of snow.  I had to help push Nate up the driveway so he could get to work.

New hens

Nate bought three new hens while I was in Florida. They are all Rhode Island Reds just like Big Red, so it has been fun finding ways to tell them all apart.  Apparently Big Red, Martha and Dolly were not too happy about the new additions to the coop, but it seems they are slowly starting to accept the change. Bea - she is molting (we think) right now so she is really easy to pick out. Vivian - she looks a lot like Big Red, but her comb is more spiky. Wilma - her feathers are lighter compared to the other three. The new girls
